Easy Tomato Pie
🍅This makes two tomato pies! You will need:
-2 frozen deep dish pie crusts
-4-6 tomatoes, preferably fresh from the garden but if you don’t have those get some Roma ones from the store!
-1/4 cup of fresh basil, chopped
-1/2 cup of red onion, chopped
-1 clove of garlic, minced
-3/4 cup of mayo
-1 cup of shredded mozzarella
-1 cup of shredded sharp cheddar
-1/2 cup of shredded parmesan
-salt & pepper to taste
🍅Preheat oven to 350 degrees, prick your pie crusts with a fork and bake for 10 minutes. Slice tomatoes and place on paper towels and sprinkle with salt to draw out the juices. Once the crusts are done pat the tomato slices with another paper towel to soak up more juice. Now you’ll place tomato slices in a single layer and then sprinkle half of the onion, basil, garlic mixture on top. Place another layer of tomatoes on top and then spread half of mayo, mozzarella, cheddar mixture on top and sprinkle parmesan on top. Repeat and use remaining ingredients for your second pie.
Bake for 30 minutes at 350 degrees and let cool for 10 minutes before serving (if you can wait!)
